So I assume its just a GPU issue but I am sadly not well enough versed to know if that is the sole cause.

My computer likes to freeze up occasionally and my GPU has been running hotter than it should. I used to be able to run 2 games of WoW and now when I run one it pushes 65-74 degrees.
The freeze will lock my monitor to whatever it is currently on. Does't go blue/black/anything. Just whatever was open at the time.

Here are my current specs. Hoping it is a simple "buy a new GPU" for a fix.

Is it frozen with a clear picture or all pixelated?

Well you can get the free program MSI Afterburner, and set a fan curve for the GPU fans, this will keep your temps down.

Too much heat can cause freezing, but so can corrupt drivers.

I would start with doing this, just to eliminate driver issues...

DDU Instructions - Nvidia/AMD
1. Get this program, here: https://www.wagnardsoft.com/ ...get the latest version, and save it to your desktop.
2. Get your vid card driver here, use the Manual Search: Nvidia: http://www.geforce.com/drivers ...or AMD: http://support.amd.com/en-us/download ...save this to your desktop.
3. Run DDU (Display Driver Uninstaller) choose: Nvidia or AMD, then choose the "Highly Recommend Option", and just do what it tells you. If it wants to go into "Safe Mode", let it.
4. After it's done and comp has rebooted to normal mode, just double click the Nvidia or AMD driver ( that you saved to your desktop in step #2) ...to install. If it want's to reboot, let it.

I take it you don't have a spare vid card lying around to test with?

I wish.. I barely scraped the funds for this pile together.
