Items have a range of stats that are variable and random. Selling it unID passes the risk of a low roll onto the buyer. The buyer, assuming that risk in turn, gets a "fairer" price.
I don't think this applies anymore, but a long time ago there was also a widespread problem of temporary duped items disappearing after trades. Unidentified items were supposedly immune to this, and you would buy with confidence knowing that your item was untouched and not going to disappear on you. For example, some duping methods made use of the Personalization quest or the Socketing quest, and the item is required to be identified before doing either of those 2 things. Just some old school trivia for you.
