i was thinking like some chicken or pork chops frozen with rice and cooked veggies.

I think rice should be fine. It comes in those microwave meals from the store.

yeah but my thought process on that is that stuff is always flash frozen.

my worry is that it will just be hard or mush.

Best bet is to cook a protein that will last a week, and prep every 7 days. Freezing cooked meat gives it a rather horrible consistency imo.

?

I don't own a freezer nor a microwave, I cook and fridge it for max 3 days. Much better and keeps the taste and flavour.

Some people do a full-week prep, but that's just overkill. Cooking rice takes max 25 minutes, where 23 minutes you got time to do something else and don't have to tend the rice, cooking pasta takes even less time / effort. Same for the veggies.

Many examples of meal preps, by watching 2 I think you can get a general idea of what's good and what's not.

So even when I cook rice normally I always add some olive oil to it. It doesn't stick or become too dry, even when I heat it up as left-overs. Maybe give the olive oil a try and lmk if it works?

Make sure there's some moisture when microwaving rice though. I'll just go to the sink and add some water if it's plain rice. Otherwise it's dry as heck.
