If we have a sunder or latent renewed flame , do we need Infinity merc or conviction on the demon ? of the Latent is doing the same .

sunder charm only reduces to 95% resist so if you dont have conviction or gear which gives -resist, you'll be hitting only 5% of your written fire damage.

if i have more then -5 on gear then i dont need it conviction ?

conviction always helps no matter how many -fire on gear you have. conviction is basically more -fire for you.
