So I am now working on the sushi station at work and I need to get a knife , the sushi chef there couldn't explain what knife I should get in English . So I went and looked around and thought a sashimi knife was a sushi knife and bought the wrong knife . Idk what I'm looking for

Theres no such thing as a sushi knife. Sushi chef will use an array of like 6-7 knives, sometimes more. For example they have a specific knife that they use only to slice through eel bones. However the 2 main knives a sushi chef will use are Yanagiba (sashimi knife) and a deba knife. The deba knife is to break down the fish into filets. The yanagiba is to slice the fish either for sashimi or to do the sushi (nigiri). Also they usually have 2 or 3 different size for each of those 2, depending on the fish they need to cut. So yeah actually i guess the sashimi knife is what you were looking for.. as the deba is for prep only, and the yanagiba is for service.
