one of my go to recipes for jerky is as follows

(i dont measure, use what you think is right and adjust)

can of rootbeer
shot or 2 or 3 of your favorite cheap whiskey/bourbon
can of crushed pineapple
onion powder
garlic powder
little liquid smoke flavoring
worcestershire sauce
teriyaki sauce
balsamic vinegar
brown sugar
soy sauce
red pepper flakes
pepper
white pepper
smoked paprika
cayenne pepper
little bit of smashed up fresh ginger

thats sounds yummy :O so much more stuff that i put in !

I smoked it wit h apple wood though

i have a bag of hickory, i will try it soon

that should be good too, although hickory is classic for bacon, which was somewhat my aim/inspiration - maple bacon. musta worked, cause my niece tried it and said it tastes like bacon...

i dont smoke my jerky, though, just dehydrate it. dont have enough space for smoking it since all ive got is a kettle grill. one day, tho, at least for some of the flavors.

bacon is in my list too, did you cold smoke or hot smoke ? rest in salt for a few days and such ?

i need to do salmon too

i use a dehydrator, but ive been known to throw it in a cheesecloth bag and put it on a "cold box" on the smoker

Why do people waste one of the best fish by smoking it?
I've never in my life smoked salmon and I constantly frown upon people for doing it.


Salmon recipe:
1 full salmon filet
1/4 cup mayo
1 TBSP of fresh dill
1 tsp garlic powder
Fresh pepper
Salt
1 whole lemon, sliced thin
1/2 sweet onion, sliced as thin as possible


In a bowl mix all the ingredients minus the lemon/onion.

Preheat oven to 400°f
Take a baking sheet and cover the bottom with foil
Lay filet on the foil and cover in the mayo mix
Top filet with sliced lemon/onion so the top is covered
Cover filet in another sheet of foil and make a stream pouch with the bottom piece of foil
Bake for about 20-30 mins or until your desired taste.

I like to take mine out around 20 mins and then I let it rest in the pouch for another 5+ mins to finish cooking.


If you've never tried this, try it. You'll love it!


Another way I like salmon is nugget form.
Take a filet, cube it, cover in seasoned bread crumbs, fry in oil, dip in above mentioned mayo mix and enjoy.

Homemade tartar:
1/2 cup mayo
1-2 TBSP lemon juice
Some diced dill pickles or dill pickle relish
Salt
Pepper

Mix up and let sit before using.
If it's still runny add some more mayo till desired texture.

what, the jerky? it wasnt smoked, i just use liquid smoke in the marinade. its not specifically 'bacon' flavored, or cured like bacon. it just comes out with a somewhat similar flavor as the flavorings are inspired by a maple flavored bacon.
