My dear, if you put seasoning on the fries prior to cooking them you may burn the seasoning, causing an unpleasantly bitter taste in place of the spicy zest you oh so desire.

the reason you add all those dry spices after cooking , is so they don't burn.

But all those spices are just a waste, once you learn that vinegar is the best thing for French Fries, not only for the taste - but it actually breaks up the grease in fried foods. Winning!
