Carteblanche my knowledge on japanese pastry is pretty limited, but my wife usually buys premade redbean jelly and make some kind of chinese version of mochis, with glutunous rice flour.. or i just buy them premade and eat them.. :P
Don't see how you expect to work at any Japanese restaurant without speaking Japanese. Especially a Michelin star rated restaurant.
