Went to Masamoto Tsukiji the other day, at Tokyo fish market... i was like a kid going to a candy store... For those who don't know Masamoto, they started making knives 150 years ago, and at some point i think like 30 years ago, the company split in two... one is more mainstream, you can buy them online and in stores, but Tsukiji is not available outside Japan, and you can only buy them at the store.. they are handmade and sharpened to your liking when you buy them .. they also ingrave your name on them.. anyway here they are !

deba, nakiri, sashimi knife and small petty is carbon. Santoku and big petty is stainless. For deba and sashimi i know each side have diff carbon, one side is soft one is hard, cause one side you should sharpen it flat on the stone with no angle, but i didnt ask exactly what type of carbon, cause staff doesnt speak too much english anyway lol
The small petty i know is very reactive, rust easily.. so really got to keep it very dry...

Yeah my name isnt hofx2 lol.. anyway it's my nick name on the knives, Joss. In japanese it would be spelled as Jo-su, you can see it in katakana on the knives.

very nice, im a chef in training one day i will need to get myself some nice knives. watch out for those fingers !!!

they prolly cost a over 1k?
