I'm just curious how you guys deal with the hours and everything?
rarely weekends off strange hours of being out till late at night after noon type shifts
how hard is it for your family? if you have one or relationship with the girlfriend / wife ?

been contemplating doing culinary school for awhile always go back to the idea but this part always gets me a little faded to the idea of it I love culinary and i soak it in unlike any other subject matter but Im unsure if i can hack the environment and or the type of hours you guys work

Honestly, that's part of what I love about doing this. This is what I have wanted to do since I was a little kid, so (for me), the long hours are a blast. But my wife is doing the same thing as me, so I don't have to deal with that part of the stress like some other people do.

I don't have a significant other, so its not too bad for me. I'm used to the long hours and the staff I work with are like a second family.

If you don't know if you'll be physically able to do the job, I wouldn't recommend it. It IS very demanding.

I also love doing it. I imagine it would really be awful if you didn't like it at all.

the culinary field isnt necessarily long hard hours in a restaurant. there other things like school and nursing homes, etc. i currently work in a home for disabled, so its a straight 40 hour work week. my actual hours are a little early, 4 am to 1 pm, but thats because i do breakfast. the pay isnt as great but the benefits are good.

If you want to be a chef, and be really good at it , you have to understand that the more hours your in the kitchen is more time your spending practicing your craft. You can't look at anything negative, use all of what being a chef takes as a way to learn. If you work for someone listen, don't even give them your opinion until you are given permission, at the end of the day, have fun, love your food and serve your food like you were cooking for the love of your life. If you love cooking you'll be amazing, if your just a cook, don't waste your time ;) but that goes with everything

i'm not very familiar with the cooking profession, but isn't sous chef fairly high? 2 years starting from pots and pans sounds pretty quick.

I'm a chef/supervisor at my workplace. The hours are tough, depending on where you work really. It's a lot of fun if you like doing it, I enjoy the dinner rushes and fast paced work.
It is not for everybody, that's for sure, and anyone who tells you it's easy is full of shit.
For me, I'm usually closing the kitchen like 5 days a week, so I'm not coming home to sometimes 2-3 in the morning.
I don't have a gf or anything, I live with my parents and they don't have a problem with my hours.
