Alright, I'm probably the biggest chef knife nerd on here.

Use a variety while in pro kitchens. Mostly the knives I make myself, but also use knives from the following makers - Watanabe, shigefusa, Shihan, yoshikane.

I forge my own chef knives that I use 95% of the time, haha.

For gyutos from other makers, the highest performance I've tried were -
Yannick
Kamon
Shihan
Watanabe
Shigefusa


Watanabe is probably the cheapest of the lot, Shigefusa being the most expensive.

I'm no pro .. just amateur.. i use fiskars with rubber grip. Very light and thin, but sturdy blade. Never had a better knife. Easy to sharpen, lasted 3 years now. Can cut anything from bananas to turnips.

Can't find a picture of the exact knife.

I gifted Miyabi knives to a chef friend in the past and they were really pleased by it. Judging by their reaction I’m assuming they were good knives.
