I really don't understand how anyone could love a steak. Maybe I am doing it wrong but all the steaks I have had all had these really tough, overly chewy parts in them, that I had great trouble chewing them. Very often I had to spit them out and I really felt that it was a huge waste of my steak. And did I mention they were unpalatable, overly tough and chewy?

In that case, it maybe too rare in your liking?

I love my steak well done but it all boils down to how a person can cook a steak. I've had steak cooked medium rare and medium well, and it was delicious

Sous vide until medium, season heavily then air dry in fridge, cast iron sear with a garlic butter baste
