Would she prefer Windows or is Linux or Chrome OS acceptable? There's some Chromebooks available that are great for just web browsing with specs that are disgustingly well priced (e.g. the Asus Chromebook Flip 302CA), and you can also install Linux or Crouton into it. The Asus has 4GB RAM, 64GB SSD, 12.5" 1920x1080 IPS touchscreen, Core m3-6Y30 processor, convertible to tablet, great backlit keyboard+good touchpad+battery life, etc. for like $430. Chome OS is really easy to use too. But depends what software she needs.

If you need Windows something like the Acer Spin 5 is extremely well-priced. 8GB RAM, 256GB SSD, 13.3" 1920x1080 IPS touchscreen, Core i5-7200U processor, very compact and light, for about $600.

If those don't have enough storage you can also just use external physical storage or cloud storage.

Well it's at Walmart but currently out of stock.

There's one on Office Depot too.
