I think just "Pin" would be too ambiguous. Having no context, I could see many people having no idea what that means (even if it's in the notification settings area).

mm maybe Pinned then if the Pin Notification is too long?

Added the feature, it's called Pin Until Clicked (and explained at the bottom).

I might point out there is a minor typo in the current text added to the bottom section of the notifications page.
