Why does light curve once you introduce a third dimension? There's an uninterrupted straight line between myself and the sun, so the light from the sun MUST curve away from where I am in order for me not to see it.

Remember that whatever explanation you use cannot result in the light going above where I am curving down towards where I am, so you also have to explain the light curving in a way that results in absolutely no light hitting me at night on a flat Earth with an uninterrupted line between myself and the light source.
