This is true? And if so, gathering professions appear the way to go? Maybe enchant?

Noob, any profession is best at new expansions/patches.
No profession is a regular income stream, unless you wanna work as a slave like a bot and sell gathering materials.

on my prot warrior i use Alchemy/Enchanting.

Potions of prolonged power (Bloods and vials)
DisEnchanting (from loot when i tank dungeons)

I make a decent amount of gold a day just grinding dungeons. When Tanks are CTA for heroics thats an ez 800g + whatever i Disenchant and for every 10 bloods i get around 4-6k Gold Depending on how much Potioned of prolonged power are going for.
