lol i know what sushi is. I lived 6 months in Japan. That's why i mentionned the rice first, then comes the fish. Yes sushi doesn't mean raw fish, but let's say sushi and fish/seafood usually goes together. I've eaten sushis all around the world, in michelin starred restaurants, and more simple places. And yeah i'm sorry but they are rules to it. Like they are certain rules for certain style of french or italian cooking etc... You don't get to mix rice with random ingredients and call it sushi, just like if you cook pasta and mix it with idk curry sauce or pulled pork you don't get to call this italian cooking.

At the end yeah you can cook whatever... i don't think they really are "rules" in cooking. But when you call stuff with specific names, like sushi, you have to respect the essence of that recipe.
Maybe in most american minds what you do can be called sushi. But in Japan this wouldnt be called sushi, and in my mind as well.

Edit : and oh if u think you have to mix total random stuff in sushi to be different from others... then i'm really sorry but you know fuck all about sushi. Like i said i've went to lots of different sushi places around the world. And they were all different. Not because they were using 10 000 different ingredients. But because they will use different type of rice. Diff type of vinegar. Diff type of soy sauce or glaze. Diff techniques when it comes to prepping fish etc etc but by looking at your pictures i don't think you would make the differences.

Our city of door county is a top ten travel destination and ppl from all around the world have ate this sushi and said they love it, they say theve travels the world and havent had sushi this good, these rolls aren't just tossed together Willy nilly, there made by two very successful and qualified chefs that you disrespect when you say that we just put fuck all in sushi to try n be diffrent.

Ok sorry it's just that i'm very passionate about sushi... it's a special event food for me.
My point is all those japanese chefs who dedicated their life to the sushi art would literally cry if they would see those called sushis.
Anyway continue experimenting, the most important part is that you enjoy yourself.

Mackerel is a large family of fish, lots of diff mackerel. Not sure what "sabe" mackerel is, never heard of it. I think you meant "saba"?
As far as i know, most common mackerel used in sushi is japanese horse mackerel (aji). Small fish.
Mackerel is very popular in Japan, like i said they are many variety, and japanese people usually eat it grilled.
Around here most mackerel you will find are spanish mackerel.
