Can't believe you haven't watched Trigun or Bebop. They're both insanely short shows and they're fucking phenomenal. Check them out when you get a chance.

You're good though. Watching the older shows like this that laid the foundation for Anime as a whole to break into western culture, are much more important to have watched than any of the most popular shows. As is true with regular television, the same stands with anime. The most popular shows, Bleach, Naruto, and One Piece, are all incredibly mediocre when compared to truly fantastic shows. It's the same for TV, shows like Two and a Half Men or The Big Bang Theory are insanely popular, even though the acting, story, concept, writing, and literally everything else involved with the show is mediocre or below average. People are just dumb. Big Bang makes idiots feel smart (even though everyone in the show is a complete fucking idiot), and sex sells, why people like Two. Don't feel bad about not watching the most popular shows, it doesn't make you any less of a fan and they're generally shit.

I would recommend checking out the big 3 at some point (Bleach, Naruto and One Piece), but it's not a big deal if you don't. I loved Bleach and I watched all of it. The story was laughable at times, and it's the same typical shonen bullshit we've seen a million times, i'm stronger than you, no, I've been holding back. Oh, so have I. Oh no, I am defeated, but my friends and family, let me mid-battle get an insane power boost and win - rinse and repeat. I watched Naruto up until the end of Pain. It just going boring to me and how they animated that fight irritated me soooooo much, that I was pretty much done with the show after that. I've tried a couple of times to watch One Piece, but haven't been able to get through more than 4 episodes, it just looks so fucking stupid.

Keep skipping. I loved the show up until the Fullbring arc. It gets a lot of shit, and it's an incredibly predictable show, but it's fucking entertaining lol.

Edit - Don't skip the Urahara backstory arc. Shit is a must watch.
