Any recipe for a nice Jerk seasoning paste?
Not looking for a dry rub as I'm not a huge fan of burnt chicken.

I don't know about making it, but the walkerwood brand is the closest I've had to authentic jerk chicken. I bought a jar in Jamaica and it can also be purchased on Amazon.

Nothing I've ever had in the U.S tastes anything like authentic jerk.

I've been to Jamaica twice now.

You just leave the meat for a while.

Anything Americanized tastes better than original - to my boring tastebuds anyway.
Thank you!
