I wouldn't really call it growing, but I would contribute ones gaming tendencies to being more picky about what game they play/like.
I'm 27, and growing up with an older brother, I started gaming very young. I've played a lot of games of various sorts, and between combining the time I have to play video games currently with the amount of games I play, my idealogy is always saying, it's not worth it.
But i don't always contribute that to the gaming world, I more so contribute to the fact that i have already played a game similar to "x" so why do it again? The point is, there are constantly new generations of gamers who haven't played "x" and that's why we will always have rehashed games.
There are some games that I am looking forward to right now, but other games that don't exist that I wish would be made.
You can't always blame the current push of graphics since there has always been a push for graphics.
