After seeing many very simple home-made pasta recipes I'm ready to try it out for the first time. But one thing bugs me, all store bought pasta seems to be enriched with vitamins and stuff. So is plain pasta not very nutritious?
Have you ever added vitamins to your pasta? I'm under the assumption that it's not needed, but I'm just curious. Share your experiences if you've tried this before.

E: Just so it's clear, I'm talking about hand-rolling kneading and shaping your pasta

Egg has vitamins and most use high protein flour. Thats prolly where your vitamin count from.i suppose it is possible to enrich pasta but uneccessary imo.i dont recall seeing enriched pasta b4 would you mind stating brand.

Some say enriched wheat flour like you say, others just have several vitamins high on the list of ingredients. I guess the post is more about why they do that. Generic brands. I haven't actually seen high protein flour before though.

For pasta just use 00 flour....
