I moved from Maine to California, and have been amazed by the fact that NOBODY knows what duck sauce is. I've tried googling some recipes but they are all either very obviously talking about something different, or trying to reproduce the nasty orange stuff that comes in a jar in stores. Nothing even close to what my favorite restaurants had by the gallon in Maine! If I had known it was a New England only thing I would have filled up some milk jugs full of the stuff!

Anyone known of any recipes that I might try? I know in Boston for example its thicker / darker than it is in Maine. At this point I'll try whatever I can get lol.

call the place and ask them what they use and if they make it in house ask if they can ship it....

Iv never made a duck sauce myself but what i would try is take the juices from duck chill so fat rises and solidifies. Skim that off .add juices too fresh pot add some redwine,cracked pepper corns,some kosher salt,some paprika,some whole tomatoes punctured some crushed garlic gloves and white onions,bit of corn starch.let all that reduce in a pot should have one delicious sauce.

just rub it until you get the sauce.

Being from Maine I know exactly what you mean.
I had a friend move away and complain about the duck sauce.
I know that apple sauce is in it, that's one of the things that makes it so good here :o

im right by the state canada side, cant be a maritime type thing never heard of it here in scotia

It was invented in New York and its strictly a New England thing! The only place I've seen it outside New England was Washington D.C.!

Yes! I knew applesauce was in it, and I believe there is also either peach or apricot. Other areas use plum sauce which gives it a much darker / thicker consistency, but not in Maine!

Duck sauce has nothing to do with duck!

...applesauce and pineapple juice ...mix to taste .
