Like everyone on forums have sigs/avas/profiles with their favorite music bands, films , tv shows characters or other things that they like and want to show it off to other people possibly trying to find some new friends with similar taste, i get that.
That's not really the whole or probably even the majority of the reason. They consider part of what they like / their hobbies as part of their identity, and they feel that their signature and avatar should represent their identity.

In the context of an image, there is no such thing as a 12 year old girl. I.e. you can look at an image and subjectively say that the figure depicted looks young or looks like it's around a certain age, but it's not objective (it's based on what you, the subject perceive, and not what exists in the object you're perceiving). You can say it's a 19 year old girl who just has a younger appearance. Or you can say it's a 12 year old boy who has a feminine appearance.
