Yes using the peel as zest is perfectly fine, and it's very good and adds a kick in some dishes

The peel it self is hard to digest for humans though, and it packs so much vitamin it's crazy

May not be a very good thing to eat it or do it all the time

you take it to a dry sieve or a fine grate cheese grater

the zest is used in cooking but the skin of fresh citrus fruits are bitter and generally not consumed

I can think of dried mandarin skin and marinaded citrus but lemon? no
