Is there a difference in classes tied to races? If so, what race would be a better thief?

no difference at all, just personal preference and size

Also racial skills, although you can only use them in PvE and WvW
Example: Asuras get a 3 sec daze skill and Sylvari gets an elite skill that makes them invuln for like 2 sec.

Most of the time you'll be sticking with your class skills anyways.

other than aesthetics, the only real difference is the erratic camera movement while doing some jumping puzzles and vistas. the bigger your character model, the more wildly the camera behaves in tight spots. can be real annoying sometimes.
