The Griffons is there because if you use a 3/20/2 you have 205% FcR (with te fcr rings on). If you use Griffons, you get 210% fcr and can switch out an FcR ring for a Soj. 1 skill from griffs + 1 from soj is sacrificing just 1 skill from a 3/20/2 + fcr ring, and you get mana mod from the SOJ which is necessary for ES.
I prefer to have more life/mana (pretty much the same thing) mods on ES sorcs than damage. The 2x soj each have mana, and wizzy has a huge mana mod. If you want damage then your suggestion is a viable alternative.
On the 200% fcr sorc, you shouldn't be getting hit nearly as much because you can tele away from nearly anything. The ES on the 200% sorc is more of a buffer for one or two quick hits to give you time to get away than it is to tank many hits. Get hit once or twice, lose lots of mana and a little life, tele away, regain your mana and be out only a little bit of health. I think 86% is plenty if it's just being used as a buffer and not the main sorc of health.
You did not mention a circle with 2 skills 20 Fc 20+ Strength
20+ Strength will give u 20 points in energy = 60 mana, if you combiny it with a ring 10fc 20 strength 80+ mana it will take soj + griffon out with ease.
