With lvl 15 fanaticism, you need 92 ias to reach 7/2 with GMB. GMB has str/dex req of 108/152. It also has an avg dmg of 43, with a max of 72.
With lvl 15 fanaticism, you need 65 ias to reach 7/2 with diamond. Diamond has a str/dex req of 89/132. It also has an avg dmg of 36.5, with a max of 40.

You would be saving 1 stat point, and sacrificing 3 to skills and tons of dmg(strafe goes off max dmg, not avg), just to not need 30 more ias and toss it off to a merc.

IMO if you wanted to swap off dmg for speed/ease of gear swaps, use a matriarchal bow. It's str/dex req is a bit high at 87/187. Your ga would be weaker than a diamond, but your strafe would be stronger with avg dmg of 33.5 and a max of 47, but you'd only need 45 ias to reach 7/2.

How does her Average Damage double (from 2804 to 5608) with less than 100% chance of double physical attack damage?

It isn't a Diablo 3 DPS calculation
It's merely showing what the damage is when it criticals
and states the % chance that the critical will happen

even with 1% chance of critical strike, average physical dmg of critical strikes are twice the average physical dmg of non critical strikes.

Should say "Average Damage With Critical: 5608" or "Average Damage With 72% Critical: 4823".
