Yes, it could have 300 Vit. But for that, it has to have Strength and Strength + Vitality. The oods are: 1 in 200 chance to have 200 Vitality multiplied with 1 in 100 chance to have 100 Vitality: on average, you have to have 20.000 Vitality and Vitality+Strength chests to have one spawn with 300 Vitality. So that is pretty rare..
