Gun grave is my personal favorite. Skip the first episode, it's the sixteenth episode or so and makes no sense and you'll probably have a much better experience just skipping it. The first half has him as a mobster, then it changes up. The first episode is present time, then it goes back by quite a few years and then works is way back up to present day, showing the first episode again.
Cowboy bebop has been called the best anime ever by many people. It's about space bounty hunters.
Samurai champloo is made by the same people as cowboy bebop, also pretty good. It's about three people trying to find a Samurai
Trigun is pretty good also.

Inuyasha was on cartoon network the same time as yuyu hakasho, it's about a half demon and a girl trying to collect all the pieces to a pearl. All of the other shows I said had 26 episodes, this one has a lot.
Ruroni kenshin was also on TV at the same time, I don't remember what it's about except for a Samurai that doesn't kill. This also had more than 26 episodes I think.
Bleach has a lot of cool fights, the story and stuff isn't the best and there's a fair bit of garbage filler content
