When my lightning sorc has a merc using Infinity, the conviction aura breaks the lightning immunity of most monsters, allowing my sorc to damage them.

However, the conviction from infinity doesn't break cold immunity of monsters and allow my cold sorc to damage them.

What's the difference?

The amount of resistance that the monsters have.

Immunity is simply 100 res or more. Conviction aura from Infinity removes 85/5 resistance from immune monsters, so anything with 117 or higher remains immune. The cold immunes have typically much higher res than 117.

i think if you get a wand with Lower Reist charges you can probably remove those cold immunes with the LR+conviction
but that's very annoying to keep doing, and I'm not 100% sure it would actually work

Will only work at 20% effectiveness when breaking an immunity.

The monster will still be left with a very high resistance.

That is one of the reason why light sorc cannot compete with Hdin and Barb when it comes to CS'ing.
